Spicy Sour Soup with Chicken and FreshTamarind Leaves
Ingredients
"100 g : chicken local thai, cleaned
5 g : chilli, red, dried
20 g : shallots, fresh
30 g : tamarind leave young
200 ml : chicken stock
4 g : galangal (blue ginger)
10 g : lemongrass fresh
5 g : kaffir leave fresh
20 ml : lime, juice, fresh
5 ml : sauce fish
5 g : chilli paste
5 g : basil sweet leave

Preparation
"Cut the chicken into bite size. Remove and keep aside.
Simmer the free range chicken meat until it becomes tender in stock pot with water on medium heat. Remove the meat and keep the stock.
Roast red onion and dried chilies in the oven until fragrant.
Boil the young tamarind leaves with the chicken stock in a pot for a while then remove away the leaves.
Add in the chicken, galangal, lemongrass, kaffir leaves and roasted ingredients. Simmer it for 10 minutes before add sweet basil leaves,
Remove from heat and season with lemon juice, fish sauce, fresh small chilies, chili paste and young tamarind leaves.
Serve immediately
